GFCF Eggnog
Ingredients:
6 large eggs
2 cups of coconut milk
1/3 cup of sugar
1tsp. GFCF Vanilla
ground nutmeg
In a large heavy saucepan, combine eggs, coconut milk, sugar.
Over medium heat, cook until mixture coats a metal spoon.
Remove from heat. While stirring, cool quickly by placing the pan in a sink or large bowl full of ice water. Stir in vanilla. Chill for several hours. Sprinkle with nutmeg before serving.
